White Chocolate Macadamia Nut Cookies


¾ cup salted Butter
1 tsp Vanilla
½ cup white Sugar
2 large Eggs
1 cup light Brown Sugar
2 ¼ cups All Purpose Flour
½ tsp Baking Soda
1 cup White Chocolate Chips
¼ tsp Salt
2 cups Macadamia nuts salted (chopped)
Coconut flakes (optional)

Pre-heat oven to 300 degrees. In mixer, cream butter & add white sugar. Cream thoroughly.
Add brown sugar. Mix on medium high until creamy & combined. With mixer on low speed add baking soda, salt & vanilla. Scrape down sides of bowl. Stop mixer & add eggs. Beat on med. High until combined. Slowly add flour & combine. Add nuts, then by hand mix in chocolate chips.

Spoon dough by teaspoonfuls & press into coconut. Place on cookie sheet coconut side up & bake 10-12mins. Makes 6 dozen small cookies or 3 dozen large.
